Almond Apricot Quinoa, Meal Makovers App Review + a GIVEAWAY

If you were to take a peek at our iPhones, you would find that we have a mild obsession for recipe apps. This is why when we heard that Liz and Janice, the dietitian duo that makes up Meal Makeover Moms created a recipe app, Meal Makeovers, we were thrilled.




We were even more thrilled after purchasing the app, and seeing what a gorgeous and nutritious recipe selection we now had available at our fingertips. Meal Makeovers is stocked with simple, approachable, and healthy recipes we’ve learned to expect from Liz and Janice. (If you haven't already seen the recipes on their website, we highly recommend you check them out! You can do so here.)

The recipes are sorted by category, such as “Pasta & Pizza,” “Side Dishes,” “Vegetarian,” “Holiday Classics,” and more.



Upon selecting the recipes you’d like to make for the week, the app creates an easy-to-follow shopping list divided by sections such as produce, herbs & spices, grocery, etc. Recipes can also be edited according to your tastes and preferences. If you’d rather pass on the onions, for example, it’s no problem. Simply unclick “onions” in the ingredients list of the recipe and it won’t be added to your shopping list.


The hardest part is selecting the recipes you’d like to make each week as each recipe is accompanied with a completely enticing photo. Last week I made the Avocado Salsa, Monster Cookies, and Almond Apricot Quinoa – all of which not only tasted ah-mazing, their recipes are nutrient-dense and tend to be lower in sodium and saturated fat than other recipes you might find online or in magazines. 


On my list for this week? Asian Salmon Sticks, Cauliflower Casserole, and Shepard’s Pie.

An added bonus: you can email recipes to friends and family and post them to social media, too!

Here’s a sneak peak at the Almond Apricot Quinoa, a recipe I made yesterday.

Almond Apricot Quinoa

Quinoa is a tiny seed that packs a big nutritional punch. It’s often referred to as an ancient grain, though technically it’s a seed. No matter what you call it, however, quinoa is considered a complete protein food, so it’s ideal for vegetarians, and it’s gluten free. Serve as a side dish or a main meal.

Almond Apricot Quinoa: a perfect Meatless Monday side dish or main course!
Makes 5 servings


Ingredients
1 cup quinoa
1 small red bell pepper
1/3 cup dried apricots
2 scallions (green onions)
1/3 cup toasted sliced almonds (*Note: my apricots are darker in color as I used a variety without sulfites)
3/4 teaspoon ground cumin
1/2 teaspoon kosher salt
1 lemon
1 tablespoon extra virgin olive oil
1 tablespoon honey
black pepper

Instructions
1. Place quinoa in a fine-mesh strainer and rinse very well several times under cold running water. Drain well. Heat a large nonstick skillet over medium-high heat. Place quinoa in skillet and “toast,” stirring frequently, until quinoa is dry and gives off a nutty aroma, 4 to 5 minutes.
2. Meanwhile, place 1 ½ cups water in a medium-size saucepan and bring to a boil. Add the “toasted” quinoa and stir well. Reduce heat, cover, and simmer until water is absorbed and quinoa is fluffy, 15 minutes. Remove from heat and let stand, covered, for an additional 5 to 10 minutes.
3. Transfer to a large bowl and fluff gently with a fork every few minutes until grains cool.
4. Cut half the bell pepper into ¼-inch dice to yield ½ cup. Coarsely chop apricots. Thinly slice white and light green part of scallions.
5. Gently stir bell pepper, apricots, scallions, almonds, cumin, and salt into quinoa until well combined.
6. Juice lemon to yield 2 tablespoons. Whisk together lemon juice, olive oil, and honey in a small bowl until well blended. Stir into quinoa mixture until well coated with dressing. Season with additional salt and pepper to taste.
Nutrition Information per Serving (total yield 3 ¼ cups): 240 calories, 8g fat (0.5g saturated), 250mg sodium, 36g carbohydrates, 4g fiber, 7g protein

Share your love of raspberries!


We have the sincere pleasure of working with the National Processed Raspberry Council, an organization that represents raspberry growers and importers from North America, South America, Europe, and Asia.

As two dietitians that love talking about food from both a health standpoint and a taste standpoint (hey, we love good food!), raspberries are easy to talk about.

They pack in a serious amount of fiber per serving – 9 grams per 1 cup to be exact, or about one-third of your daily fiber needs. And while fiber certainly has gained some clout in the world of health professionals for its digestive benefits, scientific research is now booming on fiber’s ability to boost immune health and reduce risk of obesity, type 2 diabetes, cardiovascular disease and certain cancers. You can learn more about the health benefits of fiber here. On top of that, raspberries are also an excellent source of vitamin C and supply our bodies with anthocyanins, powerful health-promoting pigments which boast anti-inflammatory properties and are linked with a long list of health benefits such as cancer protection.

Aside from their health properties, raspberries are simply delicious!  Their sweet and tart taste is reminiscent of summer fun, can conjure up happy childhood memories, and is perfectly paired with chocolate, cream, oats, pancakes, and even pumpkin! That’s why we’re so excited to announce that the National Processed Raspberry Council is launching a recipe contest this month.



All you have to do is submit a recipe of a frozen raspberry-inspired appetizer, salad, entree, dessert, and beverage between October 15 – November 15, 2014 for your chance to add a wonderful raspberry-red addition to your kitchen!

Recipe Contest Guidelines

·       Recipes may be sweet or savory, including breakfast, snacks, beverages, appetizers, side dishes, salads, soups, entrees or desserts. 
·       All recipes must use a minimum of 1 cup of frozen raspberries.
·       Recipes must contain no more than 10 ingredients.
·       All recipes must be original.
·       You may submit more than one recipe.
·       Please submit one picture with your recipe.
·       All recipes and photos must not feature any specific brand of raspberries.
·       Recipes will be judged on use of frozen raspberries, taste, appearance, creativity, and consumer-friendliness.
·       All recipes fitting the above criteria will be featured on the www.razzrecipes.com website, crediting the creator of the recipe. 
·       Three winners will be chosen among all the submissions.  Winners will be notified by December 15, 2014.

French Lentil Salad with Cherry Tomatoes & A Plant-Powered Giveaway!


A few nights ago, my friend and colleague Sharon Palmer celebrated the release of her second book, Plant-Powered for Life at Real Food Daily in Pasadena.

I absolutely love that plant-based eating is really starting to make waves.

Lisa and I are both “plant-powered omnivores,” as Sharon calls it. While we both eat animal products, plants usually have the starring role on our plates at each meal. And I think that’s really what it boils down to. Americans tend to revolve our menu planning around animal protein first – fish, pork, chicken, or beef. But, all it takes to become a plant-powered eater is a subtle change in mindset. Think of plant foods first.

For example, this time of year, there’s nothing better than sweet summertime corn. Maybe you’ll cook up some cobs of corn, mix the kernels with in-season avocado, heirloom tomatoes, and red wine vinegar. You can serve the mixture over black beans and quinoa, and serve with a ounce or two of salmon. You see? The plants take the starring role, and the salmon is the meal’s accessory.

French Lentil Salad with Cherry Tomatoes


  • Active preparation time: 15 minutes
  • Total preparation time: 30 minutes (not including chilling time)

Beans aren’t the only member of the legume family worth celebrating. Lentils, packed with fiber and protein, are just as nutritious. Plus they cook up—no soaking required—in only 15 to 20 minutes. A French ami shared her mother’s traditional recipe for lentil salad with me years ago. This simple salad, seasoned with a French vinaigrette, is a classic dish in France. It makes a wonderful, protein-rich highlight of any meal. Because the flavors continue to meld, it’s also great the next day.

Makes 6 servings (about 1 cup each)
1 pound (454 g) dried lentils (or 3 cups cooked; see Note)
4 cups (948 ml) water
2 teaspoons reduced sodium vegetable broth base
4 celery stalks, diced (160 g or about 1½ cups)
1½ cups (224 g) cherry tomatoes, halved
2 medium shallots, finely diced
¼ cup (15 g) packed chopped fresh parsley
1½ tablespoons extra virgin olive oil
2 teaspoons Dijon mustard
2 tablespoons red wine vinegar
1 teaspoon herbes de Provence (see page 000)
Freshly ground black pepper, to taste
1 medium garlic clove, minced
Pinch of sea salt, optional

  1. Place the lentils, water, and broth base in a pot. Cover and bring to a boil over medium-high heat. Reduce the heat to medium and cook for 15 to 20 minutes, until the lentils are tender but firm.
  2. Remove from the heat, drain any remaining liquid, and transfer the lentils to a large bowl. Chill for at least 30 minutes.
  3. Stir in the celery, tomatoes, shallots, and parsley.
  4. In a small dish, make the dressing by whisking together the olive oil, mustard, vinegar, herbes de Provence, black pepper, and garlic.
  5. Add the dressing to the lentil mixture and toss. Taste and season with sea salt, if desired. Chill until serving time.

Note: If you’re in a rush, use precooked, refrigerated lentils, available at many stores. Although a classic French lentil salad uses lentils du puys (small, dark green lentils), try other varieties for a colorful twist, such as yellow, beluga (black), or multicolored lentils.

Variation: Substitute cooked beans, such as white, fava, or cranberry beans, for the lentils.

Per Serving: 136 calories, 8 g protein, 19 g carbohydrate, 4 g fat, .5 g saturated fat, 4 g fiber, 3 g sugar, 55 mg sodium
